Honey Tea Brack Recipe

240g raisins                                                                  90g set honey

300ml freshly made strong tea                                 2 eggs lightly beaten

300g whole wheat flour                                             ½ tsp ground mixed spi

1tbsp baking powder

Place raisins in a bowl. Stir honey into tea and pour over raisins. Allow to soak for 2 hours. Stir the eggs into the raisin mixture . Mix the flour with the spice and baking powder and add to raisin mixture. Put into a greased loaf tin and bake for approximately I hour and 10 minutes at 180 ◦ C / Gas mark 4. Cool on a wire tray and serve sliced with butter.
